Bacon, Egg, and Spinach Breakfast Casserole
173 Cal, 19g Protein, 3g Carbs (makes 6 servings) - 2 eggs
- 1 ½ cups egg whites
- 2-3 cups frozen spinach
- ½ cup bacon bits or 6 slices of bacon cooked and crumbled
- 1 cup sliced mushrooms
- ½ green pepper chopped
- ½ red pepper chopped
- 1 ¼ cup shredded cheddar
- salt/pepper/onion powder to taste
Preheat oven to 375 degrees, use 9x13 pan
- Sautee the veggies then add them to the pan, add spinach, pour beaten eggs over the veggies, add cheese and bacon to the top
