1 large head cauliflower
2 large eggs
1 1/2 c. shredded mozzarella, divided
1/2 c. grated Parmesan
2 tsp. Ranch seasoning
Freshly ground black pepper
4 slices bacon, cooked and crumbled
1 tbsp. chopped parsley
Ranch, for drizzling
1. Preheat oven to 425º and line a baking sheet with parchment. On a box grater or in a food processor, grate cauliflower. In a kitchen towel ring out excess liquid from cauliflower.
2. Transfer cauliflower to a large bowl with eggs, 1 cup mozzarella, Parmesan, ranch seasoning, and season with salt and pepper. Stir until completely combined.
3. Transfer dough to prepared baking sheet and pat into a crust. Bake until golden and dried out, 25 minutes.
4. Sprinkle with remaining mozzarella, bacon, and parsley and bake until cheese is melted, 5 to 10 minutes more. Drizzle with ranch, slice and serve.

Porridge that is not baked porridge, it’s been awhile 😌 This morning I just did not feel like waiting 45 minutes for my breakfast to bake, so I decided to make normal oats instead :) It was the perfect fuel before my run along the lake. I grated some apple into the mixture as well and added some banana slivers + cinnamon + almond milk, which was an absolute game changer 🤤 The toppings are some raspberries, strawberries, caramelized banana coins, crunchy almond butter, coconut yogurt, and chia seeds. What are your favourite porridge toppings? (Ps: I’m in love with my new snail spoon from Savill Gardens 🐌😛)

On the left, I was at the highest weight in my whole life at 370lbs. On the right, I was the lowest weight in my adult life at 240lbs. Unhealthy eating habits got me to both of these places in my life. At my heaviest, I was binging DAILY, for months on end, and not exercising at all. At my lightest, I was eating anywhere from 400-1,200 calories a day and exercising 3-6 hours per day. I was miserable in both places in my life.
Right now I am between these two extremes, and losing weight HEALTHILY for the first time. No crazy calorie restrictions, hours at the gym, or laxatives. Just a small and healthy calorie deficit, and exercises that I actually enjoy a few times a week. I can’t wait to pass my lowest adult weight the HEALTHY way :-) 🌿✨

Sarah brings up this zoo trip pretty much every time we talk about how uncomfortable I was in my body before. Haha this was 2017. It was probably one of the hottest days of the summer and I wore jeans and a black shirt. I did that because I was so uncomfortable in anything else. I knew we’d be waking all day and I didn’t want to be chafed from wearing shorts, or have noticeable sweat marks all over my shirt, or stand out because honestly most of my summer clothes were too small. I just wanted to go unnoticed while I was huffing and puffing making my way through the zoo. This year though, I just wore clothes without even really putting thought into it. I wore shorts without worry I’d be uncomfortable. I wore a sleeveless shirt because it was going to be hot and I’m really working on the whole showing arms thing. I just enjoyed a day with my family. Now, I’m not saying I needed to lose weight to enjoy a day with my family; don’t get it twisted. What I’m saying is, I got to enjoy the day with less thought. Less thought about what ifs and can I do this. Less worry about being in pain at the end of the walk around. I’ve said it before and I will continue to say it: being over weight (morbidly obese) never held me back from experiences with my family because I never let it but it definitely made those experiences much less enjoyable. Today was a great day. A day of no worry, no pain, and just loving seeing the joy on my littles faces when they got to see all the animals. It’s reasons like this that make all the counting, weighing and prepping foods worth it. The hours in the gym are worth it. Habanero 10K was brutal. I trained in the heat but wasn’t prepared for how much energy it took to get through that soft sand. After all is said and done I ended up in the middle on the standing. So I’m happy I finished even with an average time. #habanero10k#habanero100#trailrace#finisher

Happy Saturday friends! I hope you all are having a great weekend so far! I feel like in today’s world, everyone wants to make things so complicated! People always want MORE and can never be happy with what they have! What I’ve figured out this year is that if you look at what you have in life, you’ll always have more. If you look at what you don’t have in life, you’ll never have enough! Last night, instead of going out and staying out late, my boyfriend and I stayed in, cooked dinner & just enjoyed our time together! Those simple nights like that are my absolute favorite! It’s not how much we have, but how much WE ENJOY that makes happiness ❤️
